Favorite Fried Chicken

Here’s what happened. I was going to measure it for you. I really was. But my tablespoon and teaspoon are in the dishwasher. And the babies were trying to help the cat chase a baby mouse outside 🤪 So..... here’s approximately what makes up our favorite fried chicken. It’s a seasoning blend I’ve just made up off the ingredient label from an old southern soul food spice we used to be able to get down home at Winn Dixie.

Tonight we did 13 drumsticks. Beeeeecause #onlypackofmeatatthestore 🤓

Dry mix:
3 cups all purpose flour
3 tbsp salt
2 tbsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
3/4 tsp chili powder
1/2 tsp paprika
Pro tip: Double this and put it in a ziploc freezer bag and freeze it for later. Just put as much in the bowl as you need and add more when you need to. Save the rest for next time.

Wet mix:
4 eggs, beaten
1/3 c water

Put vegetable oil between medium and medium high heat. You want the oil deep enough that it’s about half as tall as your tallest piece of chicken.

Dip chicken in wet mix, coating all sides
Dip chicken in dry mix, coating all sides
Now do that all again.

Use tongs to slowly put chicken in hot grease.

Let it cook. You will think it’s taking forever. You will want to turn the grease higher. Don’t. Check out stories to see what the grease should sound like.

After the bottom side is almost as brown as you want it, flip each piece over and continue cooking. This side will go quicker.

Get a Pyrex dish and a double layer of paper towels to put meat on when it’s ready. Sometimes I also heat up the oven to 200 and keep the batches of chicken in there to keep it hot. The paper towel will be fine.

1 box yellow cake mix
3 eggs
2 sticks butter
8 ounces cream cheese, softened
16 ounces powdered sugar

🥣 Instructions
-Preheat oven to 350 degrees. Lightly spray a 9x13 baking dish with non-stick spray.
-Place cake mix, 1 egg, and stick of butter (melted) into bowl of mixer and beat for 1 minute until it becomes a soft dough.
-Spread mixture evenly over bottom baking dish.
-Combine remaining eggs, cream cheese, and powder sugar in mixer bowl and beat until smooth.
-Spread cream cheese mixture over cake batter and bake for 35-40 minutes until golden brown.
-Allow to cool completely before cutting. 💛Or use a spoon because it’s your kitchen and we are normal people with this cake on our stove right now.

*so handy this can be made ahead of time!

🌱 12 cups (about 12-16 croissants) roughly torn, day-old croissants
🌱 2 tablespoons salted butter, thinly sliced
🌱 2 tablespoons extra virgin olive oil
🌱 2 cups mixed mushrooms, roughly chopped
kosher salt and pepper
🌱 2 cloves garlic, minced or grated
🌱 2 tablespoons fresh chopped thyme (or 2 teaspoons dried thyme)
🌱 1 cup heavy cream
🌱 1 cup whole milk
🌱 3 large eggs, beaten
🌱 2 rounded tablespoons dijon mustard
🌱 1/2 teaspoon cayenne pepper, using more or less to our taste
🌱 3 ounces deli ham or prosciutto, torn
🌱 4 ounces creamy Brie cheese, cubed
🌱 1/2 cup shredded Swiss or fontina cheese
🌱 2 tablespoons everything bagel spice (optional)

INSTRUCTIONS
🥣 Preheat the oven to 350 degrees F. Grease a 9 x 13-inch Pyrex Deep baking dish.
🥣 Arrange the torn croissants in the baking dish and lay 2 tablespoons of thinly sliced butter over the croissants. Transfer to the oven and bake 5-8 minutes, until the croissants are lightly toasted.
🥣 Meanwhile, heat the olive oil In a large skillet over medium heat. When the oil shimmers, add the mushrooms, season with salt and pepper. Cook undisturbed for 5 minutes or until golden, stir and continue cooking until the mushrooms have caramelized, 3-5 minutes. Add the garlic and thyme, cook an additional minute. Remove from the heat and set aside.
🥣 In a large bowl, whisk together the cream, milk, eggs, mustard, cayenne, and a pinch each of salt and pepper. Add the toasted croissants, mushrooms, ham, and Brie cheese, gently toss to combine. Pour the mixture back into the casserole dish. Top evenly with Swiss cheese and sprinkle with everything spice.
🥣 Cover the dish with foil and bake for 30 minutes. Remove the foil, then continue baking for another 10-15 minutes or until the croissants are golden on top. Serve warm.

3 tablespoons (ish) sausage drippings
1/3 cup all-purpose flour
3 cups milk
1/2 teaspoon salt
1 teaspoon coarse black pepper

If you’re worried about making gravy, it’s ok. Listen lumps don’t taste all that bad. Sausage will hide lots of inconsistency in the gravy 😘. Plus... I mean...HOT BUTTERY BISCUITS.

But I digress 👉🏼Measure all your ingredients out before hand and have them handy. Like, literally right there in case you feel a little panicky.

After you cook your sausage, remove the skillet from the heat.

When you’re ready to start the gravy, turn your heat on about medium, wipe the sides and bottom of your pan off really well, put the pan back on and just stir stir stir all over the bottom of the pan. A flat pancake turner works great. Don’t walk away. You’ve got this ❤️ I still get nervous! But hey lumps need friends too!

Cream Cheese Chicken Chili

**does anybody else shred their chicken with a mixer?

🌶Put 2 chicken breasts in crock pot
🌶Add 1 can black beans drained and rinsed
🌶1 can corn, undrained
🌶1 10-oz. can Rotel tomatoes w/green Chilis, undrained
🌶1 package ranch dressing mix
🌶1 tsp. cumin
🌶1 Tbsp. chili powder
🌶1 tsp. onion powder
🌶1/2 cup water

Mix it up

🌶On top add 1 8-oz package light cream cheese

Cook on low for 6-8 hours then stir and shred chicken!
